Course Content
The content of the course provides the trainee with the core of a “sustainability roadmap” which will reduce the environmental impact of your establishment, provide cost reduction and ensure that the trainees can proudly state they are contributing to the UK carbon reduction goals.

We cover the facts about climate change and the environmental impact of current practices, including deforestation, air pollution and water pollution, the international agreements and targets for decarbonisation.

Through engaging video animation and written content we explore facts and details on topics of climate change and environmental awareness, energy, transportation, growing food, food loss and food waste, waste management, water, consumption and the circular economy. With a multiple choice exam at the end of the course, we comprehensively assess trainees knowledge and are confident that all passing this course will be inspired by the knowledge received.

Who should take the course?

The course is aimed at those working in any hospitality setting, written and developed to ensure that it is suitable for all Junior & Senior staff members in the sector including those working in or managing restaurants, hotels, bars, nightclubs, cafes, retail foodservice, festivals and events.

How is the course structured?

Through engaging video animation and written content, there are 6 modules to complete. Each module has 3 sections each with an introduction, lesson slides and a summary.

After completing the modules there is a final examination consisting of 45 multiple choice questions with a pass rate of 80%

  • Be provided with an extensive introduction to the varied contributing factors to climate change and give you a comprehensive level of carbon literacy.

  • Gain a broad overview of the environmental impact of consumption of resources.

  • Understand what action you can take on a daily basis to reduce your energy consumption without affecting your operation that will result in reduced greenhouse gas emissions and cost reductions for your establishment.

  • Understand what impact transportation has on you and your establishment, including what checks and changes you can make that will reduce carbon impact and drive costs down.

  • Understand the impact of food on your carbon footprint. The training will educate you on how alterations to menu and menu planning can reduce food waste, reduce carbon impact and reduce food costs and waste costs.

  • Understand waste streams and the impact these have on the environment, It will educate you on how to scrutinise current waste streams and advise on best practice which is designed to reduce waste and ensure waste is diverted to the correct waste stream which will reduce your carbon impact.

  • Help you to reduce your water consumption which reduces your carbon impact and reduces cost.

  • Have an introduction to the circular economy and understand the impact of consumption on the environment and what simple steps can be taken to reduce the carbon impact of your establishment.

  • Understand the impact transport within the hospitality sector has on the environment and how simple changes in behaviour can reduce GHG emissions.

  • Provide your teams with up to date relevant information on a subject that is a hot topic, arming them  with information which empowers them to lead change in the workplace and have a positive contribution to the environment.

John Reeves
John, one of the co founders of the Eco Learning Hub and a co-founder of Event Cup Solutions, has over 30 years’ experience in the foodservice, hospitality and catering sector. As the owner of Dtangle – a consultancy advising on EU, UK & devolved administration legislation on packaging & materials, he is able to guide clients on sustainable solutions for the Hospitality Sector.

John IS ‘Carbon Literate’ having participated in the Carbon Literacy project and with Alison Thomas, he generated the content of the course which we believe will help our clients change their behaviour to help the planet have a more sustainable future.
Alison Thomas
Ali studied Environmental science at Aberystwyth University back in the 80s. She started out working in industrial waste in the UK but also in Africa and Honduras. Ali has been involved with community engagement and behaviour change projects for 15 years and is committed to working with businesses, events and households to make sustainable choices and to tread more lightly. Since 2011, Ali has managed Zero Waste Events – which works with 30 events a year to minimise their waste and maximise reuse and recycling.
